Cooking Converters

Cooking conversions help translate a recipe from one measurement system to another. The most important distinction is between volume and weight: a cup measures space, while grams measure mass.

Common US kitchen volume references

For US customary measures, 1 US cup is approximately 236.588 milliliters, 1 US tablespoon is approximately 14.787 milliliters and 1 US teaspoon is approximately 4.929 milliliters. A US fluid ounce is approximately 29.574 milliliters. Recipe conventions can differ by country.

Why grams and cups are not interchangeable

The weight of a cup depends on the ingredient and how it is packed. Flour can be scooped or spooned into a cup, brown sugar may be packed, and chopped ingredients contain different amounts of air. Use an ingredient-specific conversion or weigh the ingredient for greater consistency.

Temperature conversions

To convert Fahrenheit to Celsius, subtract 32 and multiply by 5/9. To convert Celsius to Fahrenheit, multiply by 9/5 and add 32. Oven thermostats may be inaccurate, so use an oven thermometer when temperature precision matters.

Check the recipe’s region

A metric cup is commonly 250 mL, while a US customary cup is approximately 236.588 mL. Australian tablespoon conventions can also differ. Always check the source recipe’s measurement standard before converting.
